1 lb. deli style roast beef, shredded
1 onion, sliced
1 pepper, sliced
1 cup sliced mushrooms
1 pkg. cream cheese
6 hoagie buns
1 cup mozarella cheese
Saute veggies in a little olive oil. Add shredded meat and desired amount of cream cheese (recipe calls for the whole pkg, but some might like a little less). Heat until cream cheese is melted and meat is warm. Toast buns. Spoon meat mixture onto buns and top with cheese.
Serve with tossed salad or chips

Rachel, although I skipped the club this month, I stole this recipe from Bernies stash! These are DELICIOUS! They are our kind of sandwich. We loved them and will add them to our rolling list of favorites!
Rachel, The only thing Heath could say was these are AWESOME! Veggies turned out great how you did them.
My husband loved these sandwiches too. We only used 1/4 of the cream cheese and it was enough. Did you freeze the vegetables raw? or did you do anything to them first?
This time, I froze the veggies raw... what do you think? Did they freeze okay? Was it a pain to thaw and then saute them? I've frozen them in the past, but after last month's limp veggies, I decided to try it this way. Rachel
